Summer Salads. It’s time for some tasty garden lettuce salad, maybe some pasta salad with those delicious garden veggies, or maybe a potluck dessert salad! Well, here is a salad that was recently a big hit.

Strawberry Fluff Jell-O Salad
Serves: 12–15

Ingredients

  • 1 package (85 g / 3 oz) strawberry Jell-O
  • 1 cup boiling water
  • 1 can (398 mL / 14 oz) crushed pineapple, drained
  • 1 can (284 mL / 10 oz) mandarin oranges, drained
    • save the juice drained from the pineapple and oranges to use as your cold water
  • 2 cups mini marshmallows
  • 1 tub (1 L / 8 cups) Cool Whip, thawed

Directions

  1. Dissolve the strawberry Jell-O in 1 cup boiling water.
  2. Stir in juice from the canned pineapple and oranges (you need 1 cup).
  3. Refrigerate for 1–2 hours, until the mixture is thickened but not fully set.
  4. Fold in the mandarin oranges, crushed pineapple and mini marshmallows.
  5. Gently fold in the Cool Whip until well combined.
  6. Refrigerate at least 2 hours before serving.
